I don't want to overstate this, but this could be the greatest dish I've ever made. Rich, hearty and a little bit spicy... This casserole has it all.
Not much planning went into this one - and I certainly didn't measure out any ingredients - I pretty much just threw everything I had into a pot and hoped for the best. After coming through it unscathed, I highly recommend living life on the edge and giving this one a shot.
Preparation time: 20 minutes | Cooking time: 4 hours | Serves: 6
INGREDIENTS (all ingredients are organic / free range):
1 x small onion;
3 x carrots;
2 x zucchinis;
1 x sweet potato;
3 x tomatoes;
4 x cloves of garlic;
1L of homemade chicken stock;
Herbs and spices (to your liking).
Finely chop the onion and fry up in a pan;
Add chorizo (sliced) and chicken mince and lightly brown;
Chop up the carrots, zucchinis, sweet potatoes and tomato and add to large pot (I used a Dutch oven);
Add meat and onion;
Pour enough homemade stock in the pot to cover all ingredients;
Add tomato paste, crushed garlic gloves and herbs and thoroughly stir to combine all ingredients;
Bring to boil then leave to simmer for as long as you want (I left it on for about four hours but you can cut this time down significantly).
