Turkey-Stuffed Capsicums

Whenever I step into the kitchen, my aim never changes: keep it simple and get out of there fast. These turkey-stuffed capsicums satisfy both of those requirements.

Preparation time: 10 minutes | Cooking time: 20 minutes | Serves: 4

Four capsicums;
500g turkey mince;
1 can x tinned tomatoes (or fresh tomatoes if you're feeling adventurous);
1 brown onion (chopped);
Garlic (minced);
Salt, pepper, ground cumin seeds, basil.

Preheat oven to 200°F;
Halve each of the capsicums and remove the insides;
Throw the onion into a frypan with coconut oil, salt and pepper and cook until the onion starts to brown;
Combine garlic and tomatoes with the onion and heat until it begins to simmer;
Add the turkey mince to the frypan and continue to stir until cooked through;
Place each of the capsicum halves into a baking dish then spoon to turkey mixture into each one;
Place baking dish in oven for 10-15 minutes.
